LO CHEF

We use only the precious meat of the Chianina breed veal.
The real Florentine steak must be in the sirloin steak with tenderloin, sirloin and must have the classic T-shaped bone in the middle.
Furthermore, its thickness must be at least two fingers and the weight must reach at least 600-800 grams per serving.

Chianina is particularly suitable for this cut, for its marbling (the distribution of fat in the muscle mass of the meat), and is therefore excellent for cooking a Florentine steak.
